He farms using draft horses instead of machines, harvests by hand, grows grapes without synthetic chemicals, and lets his wine age without additives. Ngofeen: In the Anjou region, which is less than two hours by car southwest of Paris, Olivier is known as the guy who disdains modern winemaking.
